HONEY MAID Bit-of-Irish Cheesecake

  • 1¼ cups Honey Maid Crumbs
  • ¼ cup butter, melted
  • 3 pkg. (250 g each) brick cream cheese, softened
  • ¾ cup granulated sugar
  • 3 oz. (1/2 of 170-g pkg.) white baking chocolate, melted
  • ⅓ cup Irish cream liqueur
  • 3 eggs
  • 4½ tsp. green coloured sugar
  • Heat oven to 350°F.
  • Combine crumbs and butter; press onto bottom of 9-inch springform pan.
  • Beat cream cheese and granulated sugar in large bowl with mixer until blended. Add chocolate and liqueur; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended; pour over crust.
  • Bake 45 to 50 min. or until centre is almost set. Run knife around rim of pan to loosen cake; cool completely before removing rim.
  • Refrigerate 4 hours.  Sprinkle with coloured sugar before serving.
