PREMIUM PLUS Fiesta Pasta Bake

ServingsMakes 4 servings, 1-3/4 cups (425 mL) each.
  • 3 cups penne rigate
  • ¾ cup milk
  • 180 g (about 3/4 of 250-g pkg.) process cheese product, cut into 1/2-inch cubes
  • 1 cup shreded light shredded double-cheddar cheese
  • 1½ cups halved cherry tomatoes
  • 1 green pepper, chopped
  • ¼ tsp. ground cumin
  • ¼ tsp. garlic powder
  • 10 Premium Plus Salted Crackers, crushed
  • 1 Tbsp. margarine
  • Heat oven to 350°F.
  • Cook pasta in large saucepan as directed on package; drain.  Set aside.

  • Cook milk and process cheese product in same large saucepan over medium heat until process cheese product is completely melted and sauce is well blended, stirring frequently. Add shredded cheese; stir until melted.

  • Add tomatoes, peppers, cumin and garlic powder to saucepan along with the pasta; stir until pasta is evenly coated with sauce. 

  • Spoon into 2-L casserole sprayed with cooking spray. 

  • Combine cracker crumbs and margarine; sprinkle over pasta mixture.

  • Bake 35 to 40 min. or until heated through.

  • Substitute

    Substitute 3 cups thawed frozen mixed vegetables for the cherry tomatoes and green peppers.
