  • 24 Chunks Ahoy! Cookies
  • 3 cups chocolate ice cream, slightly softened
  • ¾ cup flaked coconut, toasted
  • Top each of 12 cookies with 1/4 cup ice cream; cover with remaining cookies to make 12 sandwiches.
  • Roll edges in coconut.
  • Freeze 1 to 2 hours or until firm.
Recipe Tips
  • Variation
    Prepare using your favourite flavour of ice cream, sherbet or frozen yogurt. In addition, roll edges in chopped peanuts, coloured sprinkles or chocolate chips instead of the coconut.
  • Peanut Butter Wiches
    Prepare as directed, spreading about 1 Tbsp. peanut butter onto each cookie before filling as directed.
  • Make Ahead
