Habanero 'n Pineapple RITZwich

  • 24 Ritz Crackers
  • ¼ lb. (115 g) Monterey Jack cheese with habanero peppers, cut into 24 slices
  • 12 fresh pineapple pieces (2 oz./60 g)
  • 12 sprigs fresh cilantro
  • Heat oven to 350°F.
  • Place crackers in single layer on baking sheet; top with cheese.
  • Bake 3 to 5 min. or until cheese is melted.
  • Place pineapple and cilantro on 12 topped crackers; cover with remaining crackers, cheese sides down, to make 12 sandwiches.

    Substitute your favourite cut-up fresh fruit, such as mangos, peaches, seedless grape or melon slices, for the pineapple.
