- 3 Tbsp. roasted red pepper hummus
- ¼ EACH small orange, red and yellow pepper, cut into strips
- ½ cup Triscuit Minis Crackers
- 30 g light white cheddar cheese, cubed
- 8 English cucumber slices
- 6 seedless red grapes
- Place all ingredients in lunch box fitted with separate compartments.
- Refrigerate until ready to pack in an insulated lunch bag or box before walking out the door.
Substitute half of a hard-cooked egg or 2 Tbsp. whole almonds for the cheese.
