TRISCUIT Beet & Goat Cheese Topper

ServingsMakes 2 servings, 2 topped crackers (85 g) each.
- 4 Triscuit Dill, Sea Salt & Olive Oil Crackers
- ½ tsp. chopped shelled pistachios
- 4 tsp. goat cheese
- 1 EACH small red and gold roasted beet (2 inch), cooled, peeled and each cut into 4 slices
- ½ tsp. balsamic glaze
- Top crackers with remaining ingredients.

Garnish topped crackers with fresh herbs or greens, such as dill sprigs or arugula sprouts.
Prepare using drained canned sliced beets.
- How to Roast Beets
Scrub beets; brush lightly with oil. Wrap individually in foil. Bake in 375°F oven 25 to 30 min. or until tender. Cool slightly; remove peels, then use beets as directed.
