Two Bite Tuna Melts Recipe

Ingredients

  • 2/3 cup canned white tuna in water, drained, flaked
  • 1/3 cup Miracle Whip Calorie-Wise Spread
  • 2 Tbsp. finely chopped red peppers
  • 1 green onion, finely chopped
  • 1 tsp. Dijon mustard
  • 24 Triscuit 40% Less Fat Crackers
  • 1/4 cup shredded reduced-fat double-cheddar cheese

Instructions

  • Heat  oven to 425ºF.
  • Combine  first 5 ingredients.
  • Place  crackers in single layer on baking sheet; top with tuna mixture and cheese.
  • Bake  5 min. or until cheese is melted.

Recipe Tips

Variation For a Mexican twist, prepare using shredded reduced-fat Tex-Mex cheese. Sprinkle with chopped fresh cilantro just before serving.

How to Use the Leftover Canned TunaYou will need to use about 2/3 of a 170-g can of tuna to get the 2/3 cup flaked tuna needed to prepare this recipe. Mix the remaining canned tuna with additional chopped green onions and enough Miracle Whip Calorie-Wise Dressing to moisten. Refrigerate until ready to use as a sandwich filling.
