Ingredients
- ½ cup Triscuit Minis Crackers
- ½ cup mini cucumber slices
- 3 sweet mini peppers, seeded, cut into strips
- 2 strawberries, cut in half
- ¼ cup fresh blueberries
- 30 g light marble cheddar cheese, cubed
- 2 Tbsp. hummus
Preparation
- Place all ingredients in lunch box fitted with separate compartments.
- Refrigerate until ready to pack in an insulated lunch bag or box before walking out the door.

Prepare using your favourite variety of light cheese and/or flavour of hummus. - Variation
For a change of pace, cut peppers in half. Remove seeds, then fill the pepper halves with the hummus before packing in lunch box.
