TRISCUIT Grilled Tomato & Asparagus Topper Recipe

Ingredients

  • Triscuit Roasted Tomato & Olive Oil Crackers
  • 1 Tbsp. garlic-herb cheese spread
  • 3 grilled cherry tomatoes, halved
  • 6 blanched fresh asparagus spear tips (1 inch), cut lengthwise in half

Instructions

  • Spread  crackers with cheese spread.
  • Top  with vegetables.
  • Serve  immediately.

How to Grill Cherry TomatoesHeat heavy grill pan on medium-high heat. Add tomatoes; cook 3 to 5 min. or just until tender and lightly grill-marked, turning occasionally. Or, place tomatoes in shallow pan and bake in 375°F oven 5 to 7 min. or just until tomatoes are tender and lightly browned.

Special ExtraUse a combination of different coloured cherry tomatoes, such as 1 EACH red, orange and yellow.

How to Blanch AsparagusAdd asparagus to saucepan of boiling water; cook 1 min. or just until crisp-tender. Immediately add to bowl of ice water; let stand until cooled. Drain, then pat dry before using as directed.
