TRISCUIT Beets & Blue Toppers

- 2 small fresh beets, cooked, cooled and peeled
- 12 Triscuit Original Crackers
- 45 g Gorgonzola cheese
- 24 watercress leaves
- Cut each beet into 6 slices, then cut each slice in half.
- Spread crackers with cheese.
- Top with watercress and beets.
Substitute baby spinach leaves for the watercress leaves.
