Squarrobeetscuit (squash+carrot+beet) Recipe

Ingredients

  • 1/2 cup chopped butternut squash (1/2-inch pieces)
  • 1/2 cup chopped beet (1/2-inch pieces)
  • 1/2 cup carrot slices (1/4 inch thick)
  • 1 Tbsp. canola oil
  • 1/4 tsp. EACH salt and pepper
  • 16 Triscuit Brown Rice & Sweet Potato Caramelized Onion Flavour Cracker
  • 1/3 cup plain nonfat Greek-style yogurt
  • 1/2 tsp. crushed red pepper

Instructions

  • Heat  oven to 450°F.
  • Toss  vegetables with oil, salt and pepper; spread onto rimmed baking sheet.
  • Bake  17 to 20 min. or until tender, stirring after 10 min. Cool 10 min.
  • Spread  crackers with yogurt; top with vegetable mixture. Sprinkle with crushed red pepper.

SubstitutePrepare using your favourite variety of winter squash, such as acorn squash.
