RITZ Blintz Recipe

Ingredients

  • 1/2 cup light soft cream cheese
  • 1/2 cup light ricotta cheese
  • 2 Tbsp. sugar
  • 1/2 tsp. lemon zest
  • 1/4 tsp. ground cinnamon
  • 60 Ritz Crackers
  • 1/3 cup blueberry pie filling
  • 1 Tbsp. water

Instructions

  • Heat  oven to 350°F.
  • Mix  first 5 ingredients until blended; spread onto crackers. Place in single layer on baking sheets.
  • Bake  5 min.
  • Combine  pie filling and water in microwaveable bowl. Microwave on HIGH 20 sec. or until heated through; stir. Spoon onto crackers.

Recipe Tips

Special ExtraGarnish topped crackers with additional lemon zest before serving.

Make AheadThe cream cheese mixture can be prepared ahead of time. Refrigerate up to 24 hours before using as directed.

SubstitutePrepare using your favourite flavour of pie filling, such as cherry or apple.
