Ratatouille Dip Recipe

Ingredients

  • 1/4 cup Italian dressing
  • 1 green onion, sliced
  • 1 small eggplant, chopped (about 2-1/4 cups)
  • 3/4 cup chopped red peppers
  • 1 clove garlic, minced
  • 1/4 cup chopped fresh parsley, divided
  • 1 large tomato, seeded, chopped
  • 2 Tbsp. grated Parmesan cheese
  •  Triscuit Low Sodium Roasted Garlic & Herb Crackers

Instructions

  • Heat  dressing in large skillet on medium-high heat. Add eggplant, peppers, garlic and 3 Tbsp. parsley; cook 8 min. or until vegetables are tender, stirring occasionally.
  • Add  tomatoes and onions; simmer on medium-low heat 3 to 5 min. or until heated through, stirring frequently. Spoon into bowl; cool. Top with remaining parsley and cheese.
  • Serve  with crackers.
