Garlic-Shrimp and Cucumber TRISCUIT Recipe

Ingredients

  • 24 uncooked deveined peeled medium shrimp (3/4 lb./340 g)
  • 1 clove garlic, minced
  • 1 Tbsp. minced fresh Italian parsley
  • 1 tsp. olive oil
  • 1/4 cup mayonnaise
  • 1 tsp. lemon zest
  • 24 Triscuit Low Sodium Roasted Garlic & Herb Crackers
  • 12 thin slices English cucumber, cut in half

Instructions

  • Cook  and stir shrimp, garlic and parsley in oil in medium skillet on medium-high heat 3 to 4 min. or until shrimp turn pink. Cool to room temperature.
  • Mix  mayonnaise with lemon zest.
  • Top  crackers with mayonnaise mixture, cucumbers and shrimp.

SubstituteSubstitute a small piece of romaine or curly endive for each cucumber slice.

Serving SuggestionPair each serving of these flavourful appetizers with a glass of Vinho Verde.
