Crispy-Topped Creamy Spinach  Recipe

Ingredients

  • 2 pkg. (300 g each) frozen chopped spinach, thawed, well drained
  • 1 tub (250 g) chive and onion cream cheese
  • 1/2 cup ranch dressing
  • 2 eggs, beaten
  • 1-1/2 cups shredded double-cheddar cheese, divided
  • 30 Ritz Crackers, crushed (about 1 cup), divided

Instructions

  • Heat  oven to 375°F.
  • Mix  first 4 ingredients in large bowl. Stir in 3/4 cup Cheddar and 1/2 cup cracker crumbs.
  • Spoon  into 2-L casserole dish sprayed with cooking spray; top with remaining cracker crumbs and cheese.
  • Bake  20 to 25 min. or until crumb topping is golden brown and cheese is melted.

How to Thaw Frozen SpinachThaw frozen spinach in refrigerator overnight. Or, place unwrapped package of spinach in microwaveable bowl; thaw in microwave as directed on package. Squeeze thawed spinach well to remove as much water as possible.
