Beet & Goat Cheese Topper Recipe

Ingredients

  • Triscuit Dill, Sea Salt & Olive Oil Crackers
  • 1/2 tsp. chopped pistachios
  • 4 tsp. goat cheese
  • 1 EACH: small purple, red and gold roasted beet (2 inch), cooled, peeled and cut into 4 slices each
  • 1/2 tsp. balsamic glaze

Instructions

  • Top  crackers with remaining ingredients.
  • Serve  immediately.

Special ExtraGarnish topped crackers with fresh herbs or greens, such as dill sprigs or arugula sprouts.

ShortcutPrepare using drained canned sliced beets.

How to Roast BeetsScrub beets; brush lightly with oil. Wrap individually in foil. Bake in 375°F oven 25 to 30 min. or until tender. Cool slightly; remove peels, then use beets as directed.
